This post is admittedly very overdue, but I hope that you enjoy a glimpse of what I was eating and enjoying in May! I'll be back next week with a recipe.

Yogurt with Fruit, Granola and Chia Seeds

Hot oatmeal is no longer tempting, instead I've been eating yogurt with loads of fresh berries, mango, granola, and chia seeds.

Saag Paneer Recipe

If you've ever tried saag paneer  at an Indian restaurant and want to know how to re-create it at home, check out this recipe. My godsister and I (picture above: Hi Caitlin!) tried it and loved it. We used store-bought paneer but you could always substitute firm tofu. If you want to make a full Indian feast, you could serve it with Chicken Tikka Masala.

I've recently found a way to enjoy Brooklyn Blackout Cake more often. Steve's Ice Cream is sinfully delicious--milk chocolate ice cream, chocolate stout cake and dark chocolate pudding swirls. Thank goodness it's not cheap, otherwise I would buy it way too often.

Fish Tacos with Chipotle Crema

We made one of our favorite dinners, fresh fish tacos with pico de gallo, chipotle crema, cilantro sauce, and fresh avocado. I could eat fish tacos every week!

Roast Lamb with Lambs Quarters and Roasted Potatoes

A recent trip to the farmer's market prompted us to buy Spring lamb. We spread a paste of anchovies, rosemary, mustard, red wine, lots of garlic, and parsley on a butterflied leg of lamb before rolling it up and roasting it in the oven for 30 minutes. Don't mistake those greens for sauteed spinach, it's actually Lambs Quarters that we found at the market.
